I first heard about Amparo Botina’s El Encinal farm after it was featured at the 2016 US Barista Championship and after roasting it, I certainly understand the hype. Her farm sits in a valley with the Los Arrayanes river at the bottom fostering a perfect pocket climate for growing some wonderfully structured coffee. This past year, she installed a covered raised bed system on her farm, increasing both the intensity of flavour and moisture stability!
Amparo Botina’s coffee is such perfect representation of Nariño with its sparkling citric acidity against fruit sugars and a light warming spice. The cup opens with lovely redpear and red plum notes that work perfectly with its lemon acidity. There is a great deal of caramel and black tea base notes that give way to a long rose water, almond cookie, and marzipan finish.
