They process ripe cherries using an elongated double fermentation. It starts in the hoppers and relies on both traditional open fermentation tanks as well as parabolic dryers. The cup opens with a very clean and effervescent citrus flavour, like a lemon soda. It is mixed with satisfying toffee and caramel sweetness and a round finish with notes of gala and cortland apple.
ASMUCAFE stands for Asociación de Mujeres Agropecuarias de Uribe. It is an organization of women farmers and landowners in the El Tambo of Cauca. They pool resources and provide support for members, ensuring both quality and sustainability. As they state, “Our work is determined by our values such as responsibility, honesty, commitment, respect, solidarity, and competitiveness”.
