Great northern Huila coffees are vibrant and creamy with a little hint of spice. All of which you will find in Solomon’s coffee, which opens with a wonderful hit of blackberry and blueberry. The round body is creamy with a haze of vanilla, like really thick cupcake icing. The finish has a zippy and sticky red plum note.
Solomon Artunduaga has worked in coffee his entire life. He started on his family farm at a young age and went on to form the Cafe Salomon group, which helps local producers find new markets and receive higher prices. These days, his main focus is production at his El Futuro farm. He processes on site, using his own micro-mill to depulp fresh cherries. He uses a slightly elongated fermentation and double wash. Following 12 days on parabolic beds, his coffee travels to San Miguel in Huila for dry milling. Such precision and attention to detail is clearly reflected in the green, evidenced by Salomon's two top finishes in Colombia's Cup of Excellence competition.
