Balam Coffee Projects’s on-the-ground-approach connected me with the incredible Don Mariano. He is a third-generation farmer but wanted to push operations further with new “processing methods such as naturals and anaerobic”. As he explains, “we dedicate our life to these plants and berries” because of their "prime quality”. He started the La Esperanza farm with his father in the beautiful Copey De Dota region.
We sourced both a honey processed Red Catuaí and incredibly special Gesha and SL28 blended lot.
I love trying multiple lots from the same producer but this mix of processing with rare varietals especially shines. The Red Catuaí lot features a creamy and citrus forward cup with deep sweetness. Imagine tropical fruits topped with brown sugar. While the Gehsa and SL28 lot tastes, well, like a candy store. It vibrant and rich with bright sugars, a haze of vanilla and stone fruit flavours. Incredibly juicy and candy sweet, like chewing Double Bubble.
