Gera’s acidity is sparkling with the bright bite of wild strawberry. It is jammed with delicious and intricate citrus notes, like a lemon curd or poppy-seed lemon loaf. I very rarely use ‘tea-like' notes, given they usually indicate a roast is nearing the astringent borderline of underdevelopment (or too-light a roast) but Gera is full of black tea and bergamot in extraordinarily sweet forms: think sugary iced tea or an earl grey tea cake with a thick vanilla icing.

ORIGIN:
Faysel Abdosh is the owner of the Gera Washing Station in Limmu. It collects ripe cherries  from 750 contributing smallholder farms. Crops are de-pulped and fermented underwater for 24–36 hours. Then washed and laid on raised, shade-covered beds for 10–12 days. For Faysel, young trees and the area’s rich soil continue to raise the quality of the stations’ crops.
