ORIGIN:
Pablo Bamaca stays busy working as a schoolteacher, apiarist and coffee producer at his beautiful Finca Nohellia Farm. It is in the high reaches of Aldea Poj, sitting against a towering mountain range, which helps foster his 1.68 acres of bourbon and caturra plants. I first heard about Pablo’s coffee when it was featured in the 2021 World AeroPress Championship and I am super excited to add it to the Quietly menu.
FLAVOUR:
Over the last couple of harvests, San Marcos lots have been dependably balanced and delicious, which Pablo’s coffee certainly delivers. It opens with a nice juicy hit of blueberry acidity that moves towards the refreshing flavours of green grape. The cup ends with a sugary array of caramel, pecan pie, honey, and luscious table cream.
