Vidal Pérez Ambrocio’s El Mirador farm spans 1.5 hectares just outside the town of Sipacapa. Following depulping, he ferments cherries for 18 hours before drying them on raised nylon beds. He maintains a strong environmental directive focusing on soil conservation and using a complex irrigation system to ensure no water goes to waste. This is the second lot we have sourced from Octavio, with the previous offering appearing in our Shady Lane espresso. This late harvest has all the same gooey notes with just a slight bit more malic acidity.  

FLAVOUR:
Microlots from San Marcos are always popular on the Quietly menu, which is understandable given their nearly perfect balance of flavours. On one hand, you have a great bright berry and malic acidity. With Vidal’s coffee that means raspberry notes that dovetail into the crisp bite of an ambrosia apple. On the other hand,  you have caramelized sugars and cocoa notes, like a bite of a twix bar. The cup is rich but lively, sugary but still fruit-forward.
