FLAVOUR:
At the edge of Agua Colorada village, there is a row of small coffee farms. The final farm, nestled on the edge of dense forests and tucked in behind a beautiful waterfall, belongs to Jose Herrera. His 2.75 acre El Cipres focuses heavily on harvesting technique and increasing quality through careful processing. It is unsurprising given Jose’s past work as a founding producer in the region’s highly regarded Lima Coffee group.
ORIGIN:
Our usual partners in Peru, like Santos Marcos Ccana, were unable to export this year. So we went on the hunt to find those hallmark cooked fruit and candied pecan notes that we associate with great Cajamarca coffee. When we sampled Jose’s coffee with all its berry jam over brown sugar, we knew the hunt was over. Expect lots of raspberry and blackberry notes which give way to a round body, reminiscent of table cream, and a sugary praline finish.
