I know, I know, you are likely looking at these tasting notes and asking what is going on? Think of the juicy bite of Double Bubble, loaded with that very sweet 'interpretation' of strawberry. Next imagine the creamy, dense, and almost buttery bite of ripe papaya, with its mixture of syrupy sugar and that unmistakable tropical acidity. Finally, move to coconut and a really light milk chocolate finish. This is Cartago! And it is delicious, despite how strange it might seem at first.
I am always looking to work with individual producers and farms. However, what about great farms and stellar lots that are too small for export? Scale can often preclude such operations from accessing the specialty premiums that neighbouring farms and larger community producers garner. Accordingly, some importers will create stunning local blends. These are not leftovers but rather the brilliant work of very talented farms. Jeff at Apex sourced this lot to showcases several farms in the municipality of San Pedro de Cartago. A 36 hour fermentation followed by an even two week patio dry helps highlight the incredible sweetness made possible by local terroir.
