To celebrate the anniversary of moving to the countryside to start Quietly, I bring in a special coffee every year. It is always one that rifts on all the memories of gleeful birthday party. Think too much cake, best friends, party bags, crowded swimming pools and dance parties. But one that also celebrates the incredible potential of coffee originating from some of the world's best producers!
This coffee comes by way of the acclaimed La Palma& El Tucán and their Neighbours & Crops program. It is a community program, empowering and showcasing nearby coffee producing families. For this year's birthday cake we have a 'lactic lot' from Gerardo Barreto's El Vergel farm. While you might be thinking dairy, the lactic processing simply refers to a low-oxygen, sealed tank method that encourages high levels of lactic acid. Fresh cherries are sealed for 63 hours in dark plastic tanks before traditional pulping, washing, and drying.
