The Bayter Family is back! This lot is from Marta Rubi, the Mother of Shady and Elias Bayter, whose much loved Java lot appeared on the Fall menu. Her coffee first appeared on the menu back in 2020 as ‘Birthday Cake’. It is a low oxygen processed natural, meaning freshly picked beans are placed into stainless steel tanks and oxygen is removed. Yeasts and bacteria convert acids and sugars in the coffee’s mucilage in a highly controlled environment, which enables Marta to modulate the process and develop the cup’s incredible fruity and sweet notes. 

FLAVOUR:
The cup opens with a sparkling green grape flavour, reminiscent of vinho verde or young sparkling wine. There is a lively berry and rhubarb acidity that gives way to a very rich and smooth white chocolate sweetness. The finish is sticky and earthy, mixing more chocolate notes with ripe mango.
