Alfonso ‘Al’ Sánchez Domingo is the owner and operator of La Esperancita . At just and and half manzanas, the operation is small but continually evolving with Al’s experiments in agricultural technique. They pick and depulp on the same day. Following dry fermentation, coffee is washed three times and dried on cement patios.
Really great microlots are testaments to terroir and Al Domingo’s coffee brings all of those hallmark El Mangal notes to the cup. It has a gentle creamy acidity, like key lime pie or lemon meringue. But the real star is the dense and heavy milk chocolate notes, which slowly give way to a light almond aftertaste.
