Jesús's coffee is loaded with so many of the great hallmark notes of Concepción Huista terroir. It opens with a rounded acidity of tangerine and mandarin orange. These slowly give way to nice sugary notes of cooked apple and pecan pie. It has a long finish, with lingering hazelnut butter and milk chocolate flavours.
At just under four hectares, Jesús Leiva Cardona’s El Aguacate farm is a testament to small scale precision. Processing starts fast with picking and de-pulping happening within hours. But then slowly ferments, removing mucilage over 24 hours and then washing cherries twice. In the final step, Jesús relies on long nylon beds to dry the cherries for 5 to 7 days.
