Don Nicolás Ramirez is the owner and operator of Finca Quejiná. It is nestled in the Petatán forests, and the farm was actually used for logging timbers and lumber by Nicolás’ parents and grandparents. It has since been transformed into a thriving coffee farm with a keen focus on micro-lot production. Nicolas hopes to expand the land by buying more plots nearby, to separate out more cultivars and further his conservation program.
Huehuetenango micro-lots are always crowd pleasers and it is hard to argue with the balance between tart fruit acidity and a deep sweet notes. Nicolás’ lot opens with a burst of blackberry flavour before going sugary and smooth with toffee and creamy hazelnut. It reminds me of those half-sphere nougat and caramel cream candies that were always floating around the house at Christmas.
