I have been a big fan of coffees from the Eastern Highlands in PNG my whole roasting career and it been wonderful to see the increasing traceability and small lot options emerging over the last several harvests. To prevent lots ending up at roadside delivery points, Moses started a collection station and wet mill in his backyard. He began sourcing from roughly 50 farms from neighboring villages, offering much higher prices, increased processing control, and assistance in best picking practices. Quality continues to blossom thanks to these significant premiums and the direct feedback loop.
My love of coffees from the Eastern Highlands and specifically Kabiufa is due to the absolutely unique profile. They always seem to pair stunningly clear and fruity acidity with seriously deep caramel notes. This lot floats delicious black cherry flavours above the more tangy zip of rhubarb. From this opening acidity, the cup goes full on bakery by adding toffee and jam notes to the cup before a delightful sugary finish.
