WHAT IS THE FUTURE OF COFFEE:
Magnolia is my love letter to espresso. It is our new school espresso that delights in those surprisingly fruity shots with bright and sparkling acidity. It always seeks out sweetness paired with fun floral notes and bright acidity. It is all the best aspects of modern espresso and works to remind me that the possibilities for a good cup are endless when we forever seek coffees that are in bloom.
Testi Specialty Coffee serves nearly 850 smallholder farmers in Refisa, which includes the communities of Roricho, Bulga, Frefisa, and Solena. Testi was founded in 2009 by Faysel Abdosh with the aim of being embedded at both farm level, providing community projects and infrastructure, as well as the post-harvest stages, focusing on improving quality through processing. West Aris offerings continue to garner attention for their bombastic cups.
Sourcing coffee for Magnolia is always fun because we try to bring back the same farmers and we have no shortage of fun sweet and floral options in our network. In the Spring, this means the start of the long and glorious Ethiopia harvest. While we have the more well known washing stations from Guji and Yirgacheffe later this Summer, this gem from West Aris should not be missed. It has tons of honeysuckle and jasmine notes over the red pools of jammy berry that pool under frozen strawberries and a nice array of dried apricot and fresh nectarine flavours.
PARAMETERS:
For espresso, use a 1:2.2 to 1:2.4 ratio in 32-36 seconds.
