CONTINGENCY IN A CUP:
Possibly Maybe is the wild card on our menu. There are no strict guidelines for it. Instead it is a celebration of emergent or underrepresented origins, or perhaps a sensory profile that veers far from its regional expectations, or simply it is a lot that is delightfully surprising! We call it contingency in a cup because the flavour profile presents what is 'neither necessary, nor impossible', which is also part of what makes coffee so fun. As Björk says in her song Possibly Maybe, "uncertainty excites me" because "who knows what is going to happen?" 

ORIGIN:
Mbilidino Agricultural Marketing Cooperative Society was founded in 2018 and currently serves 378 producer members. The name ‘Mbilidino’ is a reference to the local towns of Idiwili, Mbulamsege, Ilindi, and Nonde, which is home to the member producers. They deliver to the station, who then wash and grade crops according to quality. We sourced a top lot, which was fermented for 36 hours before washing and drying on raised beds. What makes this lot particularly interesting is the area's loam clay soil, which goes hand-in-hand with growing Bourbon and Bourbon-derivative varietals, including Blue Mountain, Kilimanjaro, and Luwiro. 

FLAVOUR:
You will see a lot of Summer menus featuring Kenyan offerings but we shouldn't overlook the incredible coffee from its neighbour, Tanzania! The cup opens up with a bright and tangy citrus acidity, think pink lemonade or lime bubbly. It slowly turns into a more creamy citrus flavour, akin to orange sherbet or an orange julius. Given the bourbon varieties, you can pick up lots of heavier sugar notes, like toffee, before a nice round finish that hints at dried apple and thick caramel sauce.
