WHAT IS THE FUTURE OF COFFEE:
Magnolia is my love letter to espresso. It delights in those surprisingly fruity shots with bright and sparkling acidity. It always seeks out sweetness paired with stunning clarity and vibrancy. It is all the best aspects of modern espresso and works to remind me that the possibilities for a good cup are endless when we forever seek coffees that are in bloom.  

ORIGIN:

Olga Calle is a passionate farmer, whose El Romerillo farm sits in the upper reaches of Santa Rosa in Cajamarca. The farm spans roughly two hectares and focuses mainly on Caturra and Bourbon lots. After harvest, she de-pulps and ferments ripe cherries for 26-hours before drying for 20-30 days. It comes by way of the Cafe Imports microlot program that focuses on ‘innovative producers’, which is clear in Olga’s dynamic tasting coffee.

FLAVOUR:
It is no secret that we love Cajamarca crops for their perfect balance between vibrant fruit flavours and rich deep caramels. Olga's coffee opens with a really wonderful berry flavour that lands between wild blackberry and fresh raspberry. The profile turns sweet, with the fruit notes drifting into cooked jam flavours against an array of caramel and toffee flavours with a very light cocoa finish. 

PARAMETERS: 
For espresso, use a 1:2.5 to 1:2.3 ratio in 31-35 seconds.
