NATURAL LOTS:
In The Sun always features naturally processed coffees. These are lots in which fresh cherries are harvested from the tree and then set out to dry in the sun. By leaving on those outer fruit and mucilage layers, the seed take on those complex sugars from the pulp. This drying typically takes around two weeks with the next stage being ‘hulling’ in which the outer layers are removed before a final wash. 

Natural coffees are ‘the perfect starting point’ for people interested in specialty coffee. The processing lends itself to deep fruit-forward flavours, which are easy to pick up and makes ‘taste notes’ far less ambiguous. The cup will have much bigger body than washed processes, and natural lots can even lend themselves to more earthy and robust sensory profiles. 

Simple with heavy sweetness, our natural lots are crowd pleasers that will leave you feeling content. As Nirvana’s All Apologies suggests, “In the sun, In the sun, I feel as one.” 

ORIGIN:
Ismael Hassen Aredo, along with several shareholder families, own and operate Kayon Mountain Farm. It crosses two villages, Taro and Sweana, whose residents traditionally worked in a local mine. When Ismael and these families started the the farm back in 2012, it meant the creation of numerous permanent positions and seasonal jobs. By focusing on worker's quality of live with free transportation, financial support for local schools, and much higher wages than those at the mine, the farm has become a central part of the local landscape. Kayon also has numerous environmental mandates, including indigenous tree protection, natural compost fertilization, and highly controlled on-site processing

FLAVOUR:
It is year five with this fan favourite! Kayon uses acacia shade covering for its whole cherries, that dry with cherry fruit intact. The resulting cup is balanced and sweet with a big mouthfeel. The acidity is beautifully bright like fresh orange juice. The fruit and berry notes are intense with bursts of blackberry, blueberry, raspberry and strawberry. The milk chocolate notes so present last harvest have turned more to stone fruit flavours of apricot and nectarine with a smooth custard finish
